Easy Homemade Pizza Night

About This Recipe

Pizza night at home is one of life's simple pleasures — especially when grandchildren are helping to scatter the toppings. With store-bought dough and a quick no-cook sauce, you can have a bubbling, cheesy pizza on the table in about 35 minutes.

The trick to a crisp crust in a home oven is plenty of heat. Preheat your oven (and a pizza stone or sheet pan) as hot as it will go, and you will be rewarded with a golden, blistered crust and gloriously stretchy cheese.

Tips for Success

  • Room-temperature dough is much easier to stretch — take it out of the refrigerator an hour ahead.
  • Use a light hand with sauce and toppings; too much makes the crust soggy.
  • Low-moisture mozzarella melts beautifully and gives the classic cheese pull.

Instructions

  1. Place a pizza stone or an upside-down baking sheet on the lowest oven rack and heat the oven to 500°F (or its highest setting) for at least 30 minutes.
  2. Stir together all the sauce ingredients in a bowl.
  3. Divide the dough in half. On a floured surface, gently stretch each piece into a 10- to 12-inch round.
  4. Transfer one round to a sheet of parchment dusted with cornmeal. Spread with a thin layer of sauce, leaving a 1-inch border.
  5. Scatter over half the mozzarella and your toppings.
  6. Carefully slide the pizza, still on the parchment, onto the hot stone or pan. Bake 10 to 14 minutes, until the crust is golden and the cheese is bubbling and lightly browned.
  7. Finish with fresh basil and Parmesan. Rest 2 minutes, slice and serve. Repeat with the second pizza.

Questions & Answers

Do I need a pizza stone?

No. An upside-down rimmed baking sheet, thoroughly preheated, works very well.

Can I freeze pizza dough?

Yes. Wrap balls of dough tightly and freeze up to 3 months. Thaw overnight in the refrigerator, then bring to room temperature.
