Classic Green Bean Casserole from Scratch

About This Recipe

For many families, Thanksgiving would not be complete without green bean casserole. This from-scratch version keeps everything we love about the classic — creamy, savory and topped with crunchy onions — but replaces the canned soup with a simple homemade mushroom sauce that tastes fresher and richer.

You can assemble it a day ahead, which frees up precious time on the holiday itself.

Tips for Success

  • Blanching the beans keeps them bright green and crisp-tender.
  • To make ahead, assemble without the onion topping, cover and refrigerate up to 24 hours. Add 10 minutes to the baking time.
  • Frozen green beans work in a pinch — thaw and pat dry first.

Ingredients

Instructions

  1. Heat the oven to 375°F. Butter a 2-quart baking dish.
  2. Bring a large pot of salted water to a boil. Cook the green beans for 5 minutes, then drain and plunge into ice water. Drain well.
  3. Melt the butter in a large skillet over medium heat. Cook the mushrooms and onion for 8 to 10 minutes, until the mushrooms are browned. Add the garlic for 1 minute.
  4. Sprinkle in the flour and stir for 1 minute. Slowly whisk in the broth and milk and simmer until thickened, 3 to 4 minutes. Season with salt, pepper and nutmeg.
  5. Stir in the green beans and ½ cup of the fried onions. Transfer to the baking dish.
  6. Bake for 20 minutes. Top with the remaining fried onions and bake 5 to 10 minutes more, until golden and bubbling.

Questions & Answers

Can I use canned green beans?

Fresh or frozen beans give the best texture, but well-drained canned beans can be used; skip the blanching step.

How do I keep the topping crisp?

Add most of the fried onions only during the last 5 to 10 minutes of baking.
