About This Recipe

A frittata is the busy cook's best friend. Think of it as an open-faced omelet that starts on the stove and finishes in the oven, so there is no tricky flipping. It is wonderful warm or at room temperature, which makes it ideal for brunch with friends.

It is also an excellent way to use up vegetables in the refrigerator. Spinach, peppers, mushrooms, zucchini or leftover roasted potatoes are all delicious.

Tips for Success

  • Avoid overbaking; the frittata will continue to set as it rests.
  • Leftover wedges keep in the refrigerator for up to 4 days and make an easy grab-and-go breakfast.
  • Wrap a dish towel around the hot skillet handle as a reminder not to touch it.

Ingredients

Instructions

  1. Heat the oven to 375°F.
  2. Whisk the eggs, milk, salt and pepper in a large bowl until well combined.
  3. Heat the olive oil in a 10-inch oven-safe skillet (cast iron is ideal) over medium heat. Cook the onion and bell pepper for 6 minutes until softened.
  4. Add the spinach and stir just until wilted.
  5. Pour in the egg mixture and gently stir to distribute the vegetables. Sprinkle the cheese over the top.
  6. Cook without stirring for 3 to 4 minutes, until the edges begin to set.
  7. Transfer the skillet to the oven and bake for 12 to 15 minutes, until the center is just set and no longer jiggles.
  8. Use an oven mitt — the handle will be very hot. Rest 5 minutes, sprinkle with herbs, slice into wedges and serve.
