Mediterranean Quinoa Salad

About This Recipe

This bright, crunchy salad is inspired by the flavors of the Mediterranean: juicy tomatoes, crisp cucumber, red onion, fresh parsley and mint, all tossed with protein-rich quinoa and a simple lemon and olive oil dressing.

It holds up beautifully in the refrigerator, making it perfect for packed lunches, potlucks and picnics. Serve it alongside grilled chicken or our baked salmon for a complete, wholesome meal.

Tips for Success

  • Rinse quinoa well before cooking to remove its natural bitter coating.
  • Cooling the quinoa completely keeps the salad fresh and crisp.
  • Add Kalamata olives or roasted red peppers for extra flavor.
